Here it is!  Every time someone in our house wants to bake these staples, no one can find the right recipe.  So, here it is!  A great way to use up those brown bananas in the freezer….


Banana Muffins

1 cup oil
1 1/2 cup sugar
3 eggs
3 cups Bananas, mashed
3 cups flour
3 teaspoons baking soda
1 1/2 teaspoons salt
3 teaspoons cinnamon
2 cups chocolate chips


  1. Cream together oil and sugar
  2. Add eggs and bananas
  3. Add flour, baking soda, salt and cinnamon
  4. Add chocolate chips
  5. Scoop into muffin tins

Bake at 350F, checking after 20 minutes.

Yield: 18 large or 32 small muffins
