Here’s an easy, delicious way to make potatoes. The cooking time is shortened by starting them in the microwave, and finishing in the oven.  This is the spice mixture that I use, but throw in whatever you like to use on potatoes. Serve with sour cream or your favorite dip.

Baked Garlic Fries

6 Tablespoons olive oil
4 cloves garlic, minced
5 large Russet potatoes
3 Tablespoons cornstarch
1+ 1/2 teaspoons coarse sea salt
1 +1/2 teaspoons pepper
1/2 teaspoon dried parsley
2 Tablespoons Parmesan cheese
1/2 teaspoon paprika

Preheat oven to 425 F. Warm oil and garlic in a large, microwaveable bowl for 1 minute. Coat a baking sheet with 5 tablespoons of the oil, leaving behind as much of the garlic as possible. Cut potatoes into 8-12 wedges each. Toss potatoes in the bowl with the remaining oil and garlic. Wrap with plastic wrap and heat in microwave on high for 3-6 minutes until potatoes are translucent around the edges. In a small bowl mix the remaining ingredients. Sprinkle spice mix over heated potatoes and toss to coat potatoes evenly. Spread in a single layer on the coated baking sheet. Bake 39-40 minutes, turning halfway through.

Great with burgers!
